So, I’ve got this friend on Facebook that does some pretty amazing cupcakes… and in my previous entry, I said that she made bacon, cheese and beer cupcakes that really intrigued me. Therefore, when I found out that my sister really invested in a mixer, muffin pans, and all kinds of other paraphernalia for baking, I asked if I could go over to make some cupcakes as well. (My mom doesn’t like me using her kitchen). She agreed, so last Saturday, my brother and I went shopping for ingredients and went over to her house for our bake off.

I asked him to get a recipe online (I planned to make 2 – mini apricot cheesecakes and Guinness chocolate cupcakes), and to my surprise, he also got 2! He planned to make strawberry cupcakes and chocolate chip banana cupcakes. O_O We got all our ingredients at Carrefour within 45 minutes (if we could, we took ingredients from the house, or asked my sis if she had, like flour, sugar, eggs, milk, vanilla essence). I basically only bought those really specific stuff, like … Guinness stout, cream cheese, etc.
Kept calling my sister and Kris whether we could go over to their house, and they didn’t pick up the phone! Andrew and I went over to Kenny Rogers to have lunch, and it was only after we had finished our lunch that my sister finally picked up and said, “Come over lah!” as if she had been waiting for us all morning. -___- Oh, in Kenny Rogers, I was eating their banana raisin muffin and I was like, “Damn I must have the recipe for this!” It is seriously awesome stuff… so moist, so sweet, so nice. ;p
Arrived at my sister’s awesome condo, and we started taking out all our ingredients and getting ready the bowls, etc. My sister had covered her dining table with newspapers (very good idea) and we proceeded to start mixing our ingredients and all. My brother got off to a very good start, but I was struggling with the base for the cheesecake. Had to mash all the biscuits with butter & sugar and then bake it. Then I managed to burn 2 of the bases! But it turned out good in the end because there was not so much cream cheese mixture to go around, hahaha. Besides, less base means less work, hahahaa.
Andrew’s recipes was more of, mix everything together, bake! It was good for a nervous beginner like him, so his first batch of strawberry cuppies came out very fast. After that only could I bake my mini cheesecakes. At first, it looked TOO moist after taking it out of the oven, so I baked it longer… then the surface cracked! After I set it aside to cool down, the cracked surface “collapsed” back in again and looked normal, wtf. Hahaha. But now I know why the apricot jam decor on top is important.. not only to add some extra sweetness to the cheesecake, but also to hide cracks… hahaha!

Doesn’t look too bad , right! Quite professional right? I admit, I felt a bit nervous seeing how well he did because it’s his first time, he’s a guy who makes SCRAMBLED EGGS WITH CARROTS and FRIED STEAMED EGG and it looks good! Whereas I was having a lot of trouble with mine! :O
Except for the one in the upper left corner, it looks like some mini explosion, haha. But still, very good job Andrew! *duffs him on the shoulder*
When Andrew was finishing with his banana chocolate chip muffins, I was just starting on the Guinness chocolate one. It is much simpler than the cream cheese one, the toughest part was that you sift flour & cocoa into the liquid (melted butter & Guinness), so it tends to form lumps. As you whisk, you have to keep looking out for the lumpy parts and breaking them up. Less you wind up with a lumpy cupcake of course. The result was a VERY liquidy batter, which scared my sis and my brother-in-law… but guess what?? It turned out AWESOME as this was how you get the totally moist and lovely chocolate-y texture. I loved it! I loved it more than my cheesecake, although almost everyone else preferred the cheesecakes to my Guinness cupcakes.
The bowl on the left is eggs, vanilla essence and sour cream. The bowl on your right is melted butter and Guinness Stout… later, the cocoa powder and flour goes in.

Don’t mind the harried look, this is hard work! My sister was very amused by the enthusiastic efforts of her younger siblings. :p

Putting the cream cheese frosting on top.. but then I decided it looks ugly, so I decided not to.
Besides, the cream cheese frosting is really too sweet! Don’t think it’s that nice. Good for those who have a sweet tooth I suppose. (Like my bro-in-law.)
Trying the same “presentation” as my brother’s choc + banana muffins… =p Want or not? Unlike others, I won’t charge you for a bite. I’m looking for food tasters, to improve my cooking + baking skills!

Ok, I’m writing this on Monday, after “taste test” aka sharing the rest of the cupcakes as I can’t possibly whack ‘em all by myself. So, yeah, that’s how I got the survey that the cheesecake was better than the Stout Chocolate cakes. So odd! They said mini cheesecakes were like the ones in Secret Recipe, although I found the base odd, but they all didn’t! *feels so glad* As for the Guinness, some said the alcohol smell was TOO strong, while some said they couldn’t even tell there’s any beer. Some said it was TOO moist, while some said it was TOO hard! Are we all eating the same thing? -___- Oh, the original recipe called for some cream cheese frosting, which I did make… but when I poured it over the cupcakes, it was TOO sweet. Well, some (like my bro-in-law) liked it with the frosting. So you know, this is all very subjective. I’m just happy that generally the response was very good!
L ate two of these, so must taste good on some level, hehehe. He’s a very serious food taster, so serious that I was worried that I had poisoned him.
I plan to make some butter raisin cakes next! Stop with the cupcakes, lol.
After the cupcakes were done, we had time to play Tekken on my sister’s PS2… before bathing and heading over to USJ19′s Digital Mall to have dinner at the Grand Imperial. My mom’s 55th birthday celebration was super extravagant, hahaha. Well, maybe that’s pushing it too far, but it was extravagant at the very least. We had a private room with karaoke and a 10 course dinner.
Food wise, not bad! Ambience was good, service – excellent. No complaints. Enjoyed myself that night, especially with the karaoke!
